Peter Street’s Honey Cake

350grams Self Raising flour

115grams sultanas

1 teaspoon mixed spice

1 teaspoon baking powder

1 teaspoon ginger

3 tablespoons of oil

115grams sugar

2 eggs


150ml water

Mix all ingredients together and bake in a 20cm tin for about 2 hours at 140ÂșC.


Honey Madeira Cake

175g butter

100g honey

75g caster sugar

grated rind of 1 lemon

3 eggs

250g self-raising flour

Cream together the butter, sugar and honey. Mix in lemon rind and gradually beat in eggs. Fold in flour. Transfer into loaf tin. Bake at 170c for 1 hour 10 minutes or until cooked

Optional – brush with melted honey while warm
